Dumplings
This standard dumpling recipe can be combined with many other recipes to make elaborate dishes with different fillings. Try filling peaches, apples, aloo curry, chicken curry, or tamarind balls in the dumpling before poaching the dough.
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- water
- ½ cup vegetable oil
Directions:
Sift flour, baking powder, and salt into large mixing bowl. Gradually mix in enough water to form a dough, about 1 cup. Knead dough for 2 minutes.
Bring another 8 cups of water to a boil in a medium sauce pan. In the meantime, roll tablespoon sized portions of dough between hands into sausage shapes about 3 inches thick. (Or into discs, stuff with your choice of stuffing, and seal) Place in boiling water, cover, and cook 4 to 5 minutes.
Heat oil in frying pan over medium heat. Remove dumplings from saucepan with a slotted spoon so it drains. Fry in in hot oil until lightly golden on all sides, about 4 minutes. Serve hot.
