Bara (Phulourie)
Bara, otherwise known as Phulourie is a great appetizer dish to serve at parties with tamarind sauce. The above recipe is a quicker version, but this one has a little more thickness and vegetables.
Ingredients:
- 2 cups split pea flour
- 1 cup self-rising flour
- ¼ tsp baking powder
- 1 tsp turmeric
- ½ tsp cumin
- 1 to 2 tbsp salt or to taste
- 2/3 cup water
- ½ small onion, minced
- 2 cloves garlic, minced
- 1 green onion, green part only, minced
- ¼ hot pepper, minced
- 2 cups vegetable oil for deep frying
Directions:
Sift flours and baking powder into a mixing bowl. Stir in turmeric, cumin, and salt. Add enough water to form a very thick batter. Mix in onion, garlic, green onion, and hot pepper. Whip until light, and do not let sit or refrigerate. If you do, ensure you whip the batter again.
heat oil in a karahi or deep saucepan until very hot, about 375 °F. Drop in batter by tablespoons and fry until golden brown on all sides. Drain on paper towels until cool and serve with tamarind sauce.
